The molecular artist behind the specialities served here is a self-taught chef with an unstinting passion for his homeland Abruzzo. His masterful, creative reinterpretation of traditional dishes, strict use of fresh prime quality ingredients and, of course, outstanding culinary skills, have resulted in the distinction of being awarded three Michelin stars. “Research, simplicity and balance” are the terms which he frequently uses to define himself and his rigorous approach to a stellar performance in the kitchen. Years of experiments have resulted in meticulously studied recipes that expertly combine different flavours and textures and are the expression of his unique gastronomic style.
